Roquefort ~ Available mid June-Aug

Roquefort

Delightfully complex, Roquefort is a classic blue cheese, tangy and crumbly. Once you have tasted our Roquefort, you will never go back to regular fort. Let it build up around you and wall you and yours in from the outside world. It is excellent on crackers or made into salad dressing or dip. You can also serve it with dried fruit, nuts, apples, pears, and a variety of other fruits.

Fontina

Fontina ~ Available Sep-Nov

This cheese is creamy and mild with a very light tang. It has a buttery, nutty flavor similar to Gouda. Fontina is a semi-soft cheese that goes well with crackers, sandwiches, meat, salad... actually with anything! We offer both smoked and plain varieties. An excellent starter cheese for those unfamiliar with sheep cheese's unique flavors.

Myzithra ~ Available Nov-Dec

Myzithra

Myzithra is a traditional sheep cheese. The texture is dry without being too dry, and it has a fine grain and a delicious tang. Crumble it on pastas and salads, with bread and olive oil, or enjoy it plain on a romantic evening. The taste will draw you back to our rolling hills, seeking the source of your newfound zest for life, and will draw others back to your refrigerator, seeking that something you served them that wonderful Friday evening under the apple trees.

Ewetost

Ewetost ~ Available year round

Our answer to Gjetost: Ewetost! While Gjetost is traditionally a goat cheese, our Ewetost cheese is made entirely from the whey of sheep's milk, and is so much the better for it. For those not familiar with Gjetost or Ewetost, both are a sweet, somewhat soft, sticky, almost desert-like cheese. Our Ewetost is especially creamy. It is best served in thin slices cut with a cheese plane (you may find it easier to slice after it has been chilled). An excellent accompaniment to raisins, Ewetost also makes a unique, mouthwatering, and very filling cheese omelet.

Feta ~ Available year-round

Feta

The Feta that you know and love is produced knowingly and lovingly at Chocolate Sheep Creamery, with much attention to the texture and flavor of this classic cheese. Many of the Fetas you see today are made with cow's milk, but ours, of course, uses the traditional sheep's milk. Our Feta comes packed in a little of the brine that it is ripened in, giving it a salty taste. This cheese is excellent drizzled with a little olive oil and sprinkled on crackers, olives, pasta, or salad. You have to wonder: is it really just your Feta—or is it your destiny?

Muenster

Muenster ~ Available Mar-Apr

Muenster is a soft cheese with a taste that is similar to cheddar, but smoother and more buttery, with its own unique flavor. It is an excellent melting cheese for quesadillas and macaroni, but is also firm enough to be sliced for sandwiches. Muenster goes well with hearty breads, crackers, and vegetable trays. A marvelous cheese for eating plain as well, Muenster is one of our most popular and versatile all-around cheeses.

Havarti ~ Available Mar-Apr

Havarti

Havarti is a softer cheese than Muenster, and is more easily cut into cubes or gently grated with a grater than sliced with a cheese plane. It is smooth and buttery, with a flavor reminiscent of a very mild, soft Swiss. Excellent for melting or eating plain, it goes with anything. We especially recommend it for fondues and soups. Try serving it with grapes, olives, or rye bread.
